Start at Göreme Open Air Museum when it opens, then coffee in town. Skip the balloon unless you arrived the night before and already booked — one day is tight for a dawn flight plus sightseeing.

Walk Rose Valley or Red Valley for an hour or two. Taxis back to Göreme are easy if you finish mid-trail.

Climb for sunset near Göreme or drive to Uçhisar. Dinner: pick from where to eat.
